Jovemcafe is a friendship or working group of indigenous Popti women located in the Com community outside of San Antonio Huista. Jovemcafe is led by Paula Isabel Perez, a coffee agronomy professional who has been leading this group of women to success since completing her studies at a local agronomy school. The goal of Perez and Javemcafe is to formally organize as a cooperative in the near future.
Shortly after the women pick the coffee cherries, they are set to be depulped. Being located at such high elevation with a stable cool climate, the coffee is fermented for a slower and longer duration than typically done (up to 58 hours). Once this longer fermentation process is complete, the women thoroughly wash the coffee and soak the coffee again in clean water. Once washed and soaked, the coffee is set to dry for 4 to 5 days until the desired moisture content for shipping is reached. This extensive and slower processing (fermentation) gives the coffee its unique, clean, and memorable taste.
The cup is packed with delicate notes of jasmine tea, fresh peach, bright raspberry, and a honey like sweetness. The tasting notes of this coffee really come alive as the cup cools.

-This coffee is one of our current favorites. We envision ourselves drinking this coffee on Thanksgiving morning and once again after dinner (if there's room). It holds such nice tea like quality that is matched beautifully with the delicate fruit notes. This cup of coffee truly transforms as it cools, and it takes you on a multidimensional tasting trip with each sip.
