This natural processed coffee is achieved by picking the ripest cherries by hand, sorting them by quality, cleaning the desired cherries, and then placing them on raised drying beds until the desired moisture content is achieved. Colombia's high humidity and rainy climate do add to the challenge of achieving a high-quality naturally-processed coffee; but, when it is done properly and the coffee is moved consistently throughout the curing process, we are left with an exquisite end result like this. This coffee is an amazing example of a natural coffee done right. It is juicy and clean, with an exciting fruity flavor profile.
This Natural, Castillo varietal is grown at 1400 meters above sea level at the Finca La Rocca farm in the Tolima region of Colombia. Farmer, Jorge Rojas, is a fourth generation coffee producer venturing out on his own this year to produce fantastic coffee lots like this one. Prior to this solo venture, Jorge was working with the largest coffee association in Planadas for over a decade. Taking that experience, Jorge is ready to share his fantastic coffees with new customers around the globe. We are beyond happy share that excitement with you all.
